When grilling steaks, the unique two-zone indirect cooking functionality of the Primo Grill shines. Using the “reverse sear” technique to grill steaks allows you to have a steak that’s better than a steakhouse steak.
Set the grill for two zone cooking: light one side of the grill and place a plate over the other. Set the grill temperature at around 225 degrees Fahrenheit. Place the steaks on the indirect side when they’re ready. To season steaks, lightly oil them with olive oil, kosher salt, and freshly ground black pepper before grilling. Allow the steaks to cook, undisturbed, for around 5 minutes.
Flip the steaks and continue cooking on the indirect side until they reach an internal temperature of about 110 degrees Fahrenheit (for medium rare). Move your steaks over to the direct heat side of the grill and sear them for another minute or two per side, until browned and crisp. Remove the steaks from the grill and let them rest for a few minutes before serving.
